Smelts!

I like seafood, and have been trying to get comfortable with cooking fish.  The Goog and I have pretty much mastered roasted fish and veggies, but one day while perusing the fish section of the local MB, a bag of smelts caught out eye.  Smelts are a little white fish.  When you buy them at the store they are come head removed and cleaned, but they still look like a body of a fish.

I have never eaten these before but was intrigued by their sardine like look, and I'll just admit it, anything small is cute, so I wanted to know what I could do with the little fishes.

It seems the most popular way to make smelts is to fry them, but I didn't want to do that. So instead I opted for an "oven fry".  After dredging the smelts in egg wash and some seasoned soy flour, I cooked them in a 375 degree oven for about 30min, flipping them halfway through.

They came out looking pretty decent.

They tasted pretty decent too!  You just eat these whole.  We dipped them in tartar sauce.  They are not as mild as say tilapia, but not as strong tasting as mackerel or some other more oily fish.   I think we would buy/make these again. 


Pro Tip-  I'm not sure if this is an intended play or words or not...but Smelts...they are definitely on the fishier smelling end of cooking fish.  So, candles, crack a window...you know....

I'm still gradually beginning to like stronger flavored fish, but I look at that picture and immediately think: Sriracha. Wonder how it would taste?

I'm glad they were a success, albeit a smelly one! They certainly look tasty in their little flour jackets, and I think Holly's onto something with the Sriracha idea. Also agree re: happy to see the blog back!
