Recipe Friday: Lemon and Lavender Soda
I was first introduced to Lavender Lemonade by my friend T, at her Jane Austin party (it was faboo...so many tiny sandwiches). I was hooked on the perfumey, but fresh taste (lavender is part of the mint family) which was flowery without being cloying.
Recently on a trip to the spice store, I remembered this and decided to procure my own culinary grade lavender (don't just use some from a plant nursery unless it's organic, otherwise it could be treated with pesticides not for human consumption. and get to work. For cooking purposes the dried buds of the lavender flower are used.
Lemon and Lavender Soda
1 C. water
1 C. Sugar
2 T. fresh lavender florets
1 C. fresh squeezed lemon juice
Seltzer water
Ice
In a small saucepan, combine water, sugar, and lavender. Bring to a simmer over gentle heat. Remove from stove and let steep for 5-10 minutes. This is a lavender simple syrup. Strain and chill until ready to use.

To make the soda, combine a ¼ cup of lavender syrup with a ¼ cup lemon juice over ice in a pint glass. Fill the glass with seltzer water and serve immediately.
****Note: A little gin is quite nice in this drink. I used Plymouth, which is a bit on the sweet side.

I used to live 2 blocks from the South End Open Market, and even now I have to head there the first weekend they're open to buy lots of lavender from Gilson's Herb Lyceum (I think they do Copley, too). per scoop, which is probably 1.5 cups.
They used to have a big jug of lavender lemonade, but this last summer I think the market had just gotten too big for it. Now, I haven't had my lemonade in over a year, but I do still have some lavender left! Guess I just have to pick up lemons and seltzer!
