Recipe Friday: Broccoli Rabe

Broccoli Rabe is one of my favorite vegetables (it's one of The Goog's too for that matter). When I was growing up my mom made rabe quite often. It's very healthy and at the time, it was cheap. Sadly this is no longer the case. In the last decade or so rabe has become vogue and the price per bunch has jumped. That doesn't stop me from eating it.
Recipe Friday: Broccoli Rabe
Also call Rapini, this is the veggie that Rapenzel's dad stole from the witches garden. As a punishment, the witch took their first born (Rapunzel) and locked her away in a tower. I'm taking the witches side on this one.
1 bunch Rabe (trim away the ends of the really thick stems- you can rough chop or leave in big pieces)
olive oil
garlic
crushed red pepper
salt
optional: olives or caper (the saltiness of these things goes really well with the rabe)
also optional: a squirt of lemon juice or some lemon zest (also goes really well)

You can cook this green like you would any other green (like spinach or kale). I like to heat a pan, and saute some garlic and crushed red pepper first. Then add rabe and cook to desired tenderness, salt to taste. Add some of the optional stuff I listed if you want.

Good hot or cold!

When they did make it, it was usually a few pounds of it! Then we'd have it with dinner, and the rest would be eaten cold the next day, usually in sandwich form. Soooo goood.
I guess we're lucky that Market Basket always has it available.
